Sake is classified by two things.

First, by whether distilled alcohol is added or it is all natural. If no additional alcohol is added it is classified as Junmai or pure. Second, by milling rate. The milling rate addresses the amount of starch that is removed from the grain of rice. The more the rice is milled of polished the less starch is present and the cleaner the sake will taste.
